Cock-a-doodle do chicken soup

Since 1993 Chicken Soup for the Soul has been a staple on readers’ shelves.  It has nourished hearts and souls with inspirational true stories, while lingering on many of the most notable bestseller lists. My involvement with the books began in 2018.  Caitlin Berve, one of the writers from my weekly writing group, Writers’ Idea Factory, knew that some of my experiences with life after death had not been included in my memoir.  At her suggestion, I submitted them to Chicken Soup.  Thanks for the idea Caitlin!

While spiritual nourishment is a worthy endeavor, a bowl of piping hot chicken soup isn’t a bad idea either.  This is my best chicken soup recipe, and yes, as a nurse I believe it has healing properties too!  Biscuits or crusty bread might be needed to soak up every last drop of broth!

In a stew pot cook

1 c. diced carrots

1 c. diced celery

1 medium diced onion

2 T. olive oil

 After that is mostly cooked add in 2 crushed cloves of garlic

Add 8 cups chicken broth

2 bay leaves

1/2 t. thyme

1/2 t. oregano

1 t. pepper

1 rotisserie chicken, chopped (at least 2 cups of meat)

1T. lemon juice (fresh if possible)

salt to taste

Bring to a boil, then add a 12 oz. package of egg noodles.

Cook until noodles are done 10-12 minutes.

Top with Italian parsley.
